Pork tenderloin 300 gms
300g Pork Tenderloin roughly 1.25 inch thick and 6 inch long
1 Tbsp Grated Garlic
1 Tbsp Grated Ginger
1 Tbsp Honey
1 Tbsp Dark Soy Sauce
¼ Cup Orange Juice (freshly squeezed)
For Glaze – 2 Tbsp Honey 1 Tbsp Sweet Soy Sauce
1 Tsp sugar, though Golden syrup works best, but unable to find it here
Garnish: Scallions, Sesame and Red bell Peppers or chilli as per (Kept in chilled water for 10 mins)
Method for pork tenderloin sweet soy
Finely grate the Garlic and Ginger.
Add the Garlic, Ginger, Honey, Soy Sauce and Orange Juice in a bowl.
Add the Pork, thoroughly coating the meat in marinate all over. (A ziplock bag works best for meats)
Marinate the Pork over night, turning it in the morning.
When ready to cook, shake off the spare marinate and place the pork in a roasting pan or a thick iron skillet or a non stick
On the skillet (med-high heat) place the tenderloin for about 5 mins and turning it until all the sides are done. (You can use your spatula to protect thin end of the tenderloin to avoid overcooking of the tenderloin tail, which is the thin end and cooks in 2-3 mins)
Reduce the flame
Take the left over Marinate and add the Sweet Soy Sauce and sugar syrup, mix and place over a medium high heat in a pan.
If you like a bit of boldness add Rice wine vinegar just before you finish
Reduce to a thick dipping sauce, this should take 10 mins.
Notes: Pork Tenderloin is a very soft meat, lesser the flavoring the better, quick grilling or stir fry should do best if you want to try, else a steak too once you’re used to it!
