How to light the banquet and food

A décor of minimal lights that cover warm yellow colours would do the best to bring the visual appeal of the food. As for the buffet area, we’d strongly suggest no coloured lights at all, unless you want the food to look alien and perhaps inedible. Using spot focus light, warm incandescent or LED spots are the best and safest, this is what we use for professionally shot images across the website. Long drapery next to food due to safety concerns should be avoided. Aromatic candles on dinner tables should be totally totally avoided they conflict with flavour profiles and gastronomy principles and human sensory motors that build appetite. This is a no-no in all forms, let the aroma of food do it’s magic.

 

Underlighting Areas

Some food areas can use under-light effects that amplify food. My personal favourite is an Avocado quiche with Mango salsa and a great chicken or Malai tikka does great for any catering event in Delhi.

This need not be alcohol, kids can have a mocktail bar, a great bar should be well stocked. Alcohol stocks, size up 30-35% soda and coke respectively, juices around 20% and 15% for sprite, for a kids party add Fanta, rest can be evenly distributed with tonic, red bull and perhaps ale etc. A good barman and about 1 bar man to 15 guests is a good-sized measure. A party of 50 guests required about 17-20 staff in total. 1 staff to about 2.5 guests and that’s how a party turn into a grand bash, once again these numbers are a functions of making any event memorable.

 

Main course

Guest tend to eat light, including Indian menu, most are happy with the appetisers, having a good variation of breads always does well, avoiding cheese is a good idea as well. Gathering may prefer some leafy salads, some baked pie’s, roasted meat, if it’s winter use red wine sauces, to mildly flavoured fish, pasta can be lightly flavoured, velvet mashed potatoes suing some caramel or umami flavours or both; such as mushroom and onions with dollops of butter & cheese. Meaty vegetables and for this season perhaps sugar snap peas and asparagus sautéed is would be my favourite in white wine and during winters an oven baked Sicilian village styled caponata with cappers and balsamic glaze. I like country style european flavours, they are hearty warm and does best for small intimate gatherings. You can use this to plan your menu

Once again a hearty warm dessert like poached pears or pineapples, perhaps chocolate or coffee based and two light dessert like a cheese cake or mascarpone topped with fruits like strawberry does well accompanied by gelato types of ice creams.
